What it does
Google One is the app for Google's storage subscription. It shows how your Google Account storage is used across Drive, Gmail and Photos, manages your plan and family sharing, and lists member benefits. It is preinstalled on Pixels, where Google advertises Google One offers for new owners.

How to disable it
Settings offers Disable for this package on most phones. Open Settings > Apps > See all apps > Google One > Disable.
Disable it (reversible)
adb shell pm disable-user --user 0 com.google.android.apps.subscriptions.redTurn it back on
adb shell pm enable com.google.android.apps.subscriptions.redThe stronger option removes it for your user only; the original copy stays on the phone and a factory reset brings it back. Prefer disabling: it is easier to undo.
Uninstall for the main user
adb shell pm uninstall -k --user 0 com.google.android.apps.subscriptions.redRestore after an uninstall
