Google package
The background sync adapter that keeps the contacts on the phone matched with the contacts in your Google Account. You can disable it, with a caveat: read what stops working first.
Google Contacts Sync is the component that copies contacts between your Google Account and Android's contacts storage on the phone. It runs in the background whenever contacts change on either side or Android schedules a sync, and its on and off switch is the Contacts toggle in your Google Account's sync settings. It has no icon of its own.
Contacts stop syncing with your Google Account, so new or edited contacts are not backed up and do not reach your other devices.
On most phones Settings greys out Disable for this package, so ADB is the way to turn it off. The commands below work without root and can be undone.
Disable it (reversible)
adb shell pm disable-user --user 0 com.google.android.syncadapters.contactsTurn it back on
adb shell pm enable com.google.android.syncadapters.contactsThe stronger option removes it for your user only; the original copy stays on the phone and a factory reset brings it back. Prefer disabling: it is easier to undo.
Uninstall for the main user
adb shell pm uninstall -k --user 0 com.google.android.syncadapters.contactsRestore after an uninstall
adb shell cmd package install-existing com.google.android.syncadapters.contactsNew to ADB? Set it up in about ten minutes.
